Former Healthcare Workers Find Sweet Success with Dessert Pancake Truck

When Troy Garcia and his wife, Jordan, rolled out their first batch of dessert mini pancakes in the fall of 2023, they were taking a leap of faith, turning from their careers in healthcare to food truck operators. But they were on to something as their sweet treats quickly became a hit in local markets.
The former emergency room workers had no prior food truck experience. What they did have was a newborn son, a dream of more family time and a shared desire to create something that would bring people together.
“We wanted to start something that would allow us to stay home with our new son and provide a fun and delicious way to connect with the community,” Troy says.
Flips N Sips quickly found its niche, serving up warm mini pancakes topped with everything from fresh fruit and ice cream to sauces, cookie crumbles, and other crowd-pleasing toppings. Alongside the sweet treats, the menu features handcrafted lemonades, frozen drinks, and specialty sodas, all designed to be as much a visual delight as they are a tasty one.
The Garcias’ bright, inviting setup has become a familiar sight at events around Lake County, including Whimsy Market gatherings and the Fresh Market at Ferran. For Troy, these appearances aren’t just about business, they’re about building relationships.
“It’s the people,” he says. “Seeing kids’ faces light up when they get their pancakes, having regulars stop by to say hello, that’s the best part.”
Flips N Sips has also become a way for Troy and his family to stay rooted in the community they love. By choosing local events and markets, they’ve been able to connect with other small business owners and create a loyal customer base.
Looking ahead, Troy says their focus is on continuing to grow without losing sight of what makes Flips N Sips special.
“We’re grateful for every person who stops by, whether it’s their first time or their fiftieth,” he says. “This is about more than food. It’s about making people smile and being part of the moments they share with family and friends.”
