Gourmet Today serves up more than meals — it delivers memorable moments and rare service, well done.

For Jessy Flinn, catering has always been more than just cooking food.

It’s about anticipating the unexpected, solving problems before guests ever notice them and helping people celebrate some of life’s biggest milestones.

“We always say, ‘Hope for the best. Plan for the worst,'” Jessy says.

That philosophy has guided Gourmet Today since she and her husband, Kevin, launched the Leesburg-based catering company more than 15 years ago.

What began as a small business has grown into a full-service culinary company offering wedding catering, private chef experiences, corporate events, prepared meal delivery and customized menus throughout Lake and Sumter counties.

While guests remember beautifully presented meals, they rarely see what happens behind the scenes.

“Imagine moving an entire restaurant kitchen to a different location for every event,” she says.

She says she once had to serve 300 guests from what was essentially a janitor’s closet. She also set up under a tent during a downpour and worked from the back of a truck in 105-degree summer heat. In catering, every event requires careful planning, flexibility and the ability to adapt when plans change.

“Catering is all about logistics, flexibility and triple-checking everything,” Jessy says. “I always plan for more time than I need because inevitably that’s when there’s an accident on the road, an employee calls out or the schedule changes and you have to rewrite the script in real time.”

Long before Gourmet Today became her career, cooking entered Jessy’s life during one of its most difficult chapters.

Six months after she and Kevin were married, he was diagnosed with cancer.

While he recovered from surgeries, Jessy began recreating some of his favorite restaurant meals at home. What started as a way to lift his spirits quickly became a passion that led her to culinary school, an associate degree in Culinary Management and eventually Gourmet Today.

“Every single step from that first restaurant copycat recipe led me to where I am today,” Jessy says. “What started with something so scary became the stepping stone for the rest of my life.”

Today, every Gourmet Today menu is customized around the client’s tastes, dietary needs and vision for the event. Jessy says no two celebrations are alike, and that’s part of what keeps the job exciting.

“The food is important, but it’s really about people,” she says. “You celebrate the great things with it, comfort those who need it and feed people through every milestone and reunion. I love being a part of the way people connect over the table.”

That philosophy extends beyond the menu.

Jessy says one of her unofficial jobs at weddings is making sure the bride and groom actually eat the meal prepared for them. Between greeting guests, taking photos and following a packed schedule, couples often miss dinner altogether.

“I’ve hidden more than one bride in the kitchen,” she says with a laugh. “The bridal party runs interference while she finally gets a chance to eat.”

For Jessy, those small moments are just as important as the food itself.

After all, long after the tables are cleared and the last guest heads home, it’s the memories people take with them.
